Description

Traditional Dutch Farmstead Gouda: This cheese is made according to a "Boerenkaas" (farmer's cheese) recipe used in the Netherlands for making Gouda on the farm from raw milk. This dense, firm cheese is known for its smooth consistency. As it ages it develops a nice sharpness with sublte nutty and/or fruity notes, depending on a large extent on what the cows were eating at the time. We age this cheese for about four months for a full flavor.
