Sour Cream Chicken Enchiladas
Corn tortillas, hand-rolled with shredded chicken, pimentos, and cilantro, covered in a Mexican inspired creamy sour cream and chive sauce, topped with cheddar cheese; paired with yellow rice.
MICROWAVE: Remove lid & shrink wrap. Loosely cover tray with microwave safe lid or plastic wrap, place tray in the center of microwave at least 1. from the sidewalls. Prepare on high heat; from frozen 3.5 - 4.5 minutes, from thawed 1.5 - 2.5 minutes, or until internal temperature reaches 165 F as measured by use of a thermometer.
CONVECTION OVEN: Remove lid & shrink wrap. Cover with foil. Bake in tray on metal sheet pan at 350F; from frozen 10-15 minutes, from thawed 4-7 Minutes, or until internal temperature reaches 165F as measured by use of a thermometer.
